Jay got a fun birthday prezzie from my parents-an ebelskiver pan. Ebelskiver’s are round Danish pancakes. They often have fillings of fruit, chocolate or cheese. You can also just make them plain and top them with butter and syrup, powdered sugar or jam. We made them for breakfast yesterday. We made several different types on our first foray with the ebelskiver pan-blackberry filled, blackberry/cream cheese filled, chocolate chip filled, and cinnamon filled topped with a cream cheese frosting.YUM!! Even Gimlet got to enjoy one with his breakfast. We will definitely be experimenting more with the dish. Next up will be cornbread ebelskivers stuffed with jalapenos and cheese.
